What’s better than low carb homemade Baileys? Low carb Baileys Fat Bombs!
It’s no secret that I’m always looking for new ways to mix alcohol with chocolate (chocolate martini or spiked hot chocolate, anyone?). I’m also kind of obsessed with the keto term “fat bomb” because every time I read the words in my head I nearly spit across the room in laughter.
Full disclosure: I’m new to the whole fat bomb game. I know I know, a tad late to the party, but I’m here today to say “HELLO, FAT BOMBS!”
Now picture a tall blonde entering the room proclaiming this while doing an awkward little sashay toward the booze counter.

I don’t think you’re ready for this jelly. Not literally jelly, but decadent, fudgy, chocolate cheesecake. And this low-carb Baileys mixer is so simple, you’ll be keeping this on standby in your fridge for all of your cocktail needs.
Fun challenge: serve the Baileys to your relatives and don’t tell them it’s low-carb. See if they can tell the difference. Not unlike the time I gave my husband deer heart without telling him what it was.

Ingredients
- Homemade Keto Baileys
- ½ cup heavy whipping cream
- 2 shots of espresso or 3 oz of strong brewed coffee
- 1 tsp almond extract
- 1 tsp vanilla extract
- 2 tsp 100% cocoa powder
- 2 tbsp brown sugar (keto-friendly)
- ½ cup whiskey or bourbon
- Coconut Baileys Chocolate Cheesecake Fat Bombs
- 1 pkg of Stevia-Sweetened Dark Chocolate Baking Chips
- 1 cup of crushed walnuts or almonds
- 1 (8 oz) pkg of plain cream cheese
- 3 tbsp of Keto Baileys
- 3 tbsp of allulose-based powdered sugar
- 1 tbsp melted coconut oil
- ¼ cup shredded (unsweetened) coconut
- Chocolate Fat Bomb Coating (optional)
- low carb chocolate or high percentage cacao chocolate melting wafers
- one teaspoon of coconut oil
- one teaspoon of almond extract
- dash of keto powdered sugar for topping
Steps
- Start by making your homemade Baileys, which will provide enough servings to make at least 10 batches of fat bombs.
- Combine Baileys ingredients in bowl. Whisk just until blended. Be careful not to whisk for too long or your cream will begin to form peaks. Store in a close-cap container or mason jar in the fridge until ready to use.
- Shake to mix your Baileys immediately prior to pouring; the components will settle at rest.
- Now you can make your cheesecake fat bombs. Melt your dark chocolate baking chips and coconut oil using a double boiler or by melting in the microwave in 30-second increments.
- Once your chocolate has melted, remove from heat and combine remaining ingredients. This mixture gets pretty thick; you may need to use your hands! I added the tablespoon of melted coconut oil at this point to give make it a bit more pliable.
- Form your cheesecake batter into balls and place onto a sheet of wax paper. Place balls in the fridge for ~30 minutes.
- Once chilled, dip your fat bombs into some melted chocolate wafers (Full disclosure: I used Ghirardelli which is definitely NOT keto friendly, but Choc Zero Dark Chocolate Chips would also work. Just note that Choc Zero will not ship orders during the summer months).
- Feel free to coat your bombs with sifted keto powdered sugar, chopped nuts, or coconut shreds for an elegant final touch.
Other keto recipes to make with homemade Baileys
Alright guys so I tested a few different options with my homemade Baileys -- a Baileys martini based on this recipe and keto whipped cream made with Baileys ingredients.
The martini was a flop, and at first I assumed the whipped cream was a flop too. However, when I went to retrieve my Baileys whipped cream from the freezer I realized it had turned into ice cream!
To make Baileys Ice Cream, add 3.5 oz more heavy whipping cream to the original recipe and whip with a mixer on high for 10 minutes. Then place in the freezer. Once solidified, mix with a spoon. It should look just like this:
You can also use this homemade Baileys in a Baileys White Russian. To make, mix the following:
- 2 oz of keto homemade Baileys
- 1 oz milk
- 1/4 tsp of keto brown sugar substitute
- 1/2 oz of vodka
- 1/2 oz of my homemade coffee liqueur
Mix ingredients and serve on ice.
How to make a keto fat bomb
Hello class, welcome to Fat Bombs 101. I’ll be your instructor today. Pay no mind to the empty martini glass behind the podium. Now, as part of my research into this post, I discovered a reoccurring pattern in the composition of keto fat bombs. Kind of like a deep dive into fat bombs (or me diving into a money pit of fat bombs like Scrooge McDuck).
The secret to any fat bomb recipe is using the proper ratio of binders low in carbohydrates and high in fats. Swapping out butter with coconut oil and/or coconut shreds is likely beneficial, but according to Harvard's T.H. Chan School of Health, commercial-grade coconut oil available in most grocery stores tends to be high in lauric acid, which can raise harmful LDL levels and cholesterol.
The same study advises using 25% less coconut oil than butter if you plan to swap out your recipe to use coconut oil.
Lastly, because fat bombs are high in saturated fat, you don't need to bake your recipe. Simple place your batter in the fridge and wait for your mixture to solidify. Roll them into balls, and voila!

Coconut Baileys Chocolate Cheesecake Fat Bombs
Ingredients
Keto Baileys
- 1/2 cup heavy whipping cream
- 3 oz espresso or strong brewed coffee
- 1 tsp almond extract
- 1 tsp vanilla extract
- 2 tbsp allulose-based brown sugar substitute
- 1/2 cup whiskey or bourbon
Coconut Baileys Chocolate Cheesecake Fat Bombs
- 3 tbsp keto baileys (above)
- 1 pkg Stevia-Sweetened Dark Chocolate Baking Chips
- 1 cup crushed walnuts or almonds
- 8 oz cream cheese
- 3 tbsp allulose-based powdered sugar
- 1 tbsp melted coconut oil
- 1/4 cup shredded unsweetened coconut
Chocolate glaze
- 1 pkg low carb chocolate melting wafers
- 1 tsp coconut oil
- 1 tsp almond extract
- 1 dash sifted powdered sugar (topping)
Instructions
- Make your homemade Baileys. Combine listed ingredients in a bowl. Whisk until blended. Be careful not to whisk for too long or your cream will begin to form peaks. Store in a close-cap container in the fridge until ready to use! Shake to mix container contents evenly prior to pouring.
- Make your fat bombs using your homemade Baileys. Melt your package of chocolate using a double boiler. Combine with remaining ingredients in a large mixing bowl. Add additional clumps of melted coconut oil if mixture is too dense. Form batter into small balls and place on a cookie sheet lined with wax paper.
- Let your bombs cool in fridge for 30 minutes.
- Melt your chocolate wafers on a double boiler or in the microwave with your coconut oil in 30 second increments. Once melted, add almond extract. Dip your chilled fat bombs in chocolate mixture and place back on wax paper.
- Top your balls with shredded coconut or sifted keto confectioners sugar.
