Hot chocolate on keto? Yes it can be done.
Here's how to take it from blah to BA-DA-BING, BA-DA-BOOM.
Let's start with homemade coffee liqueur. Traditional Kahlúa packs a whopping 16.7 grams of carbs per 1.5 oz (yikes!) but my low carb version has only 0.5 (yeah, baby!)
Coffee liqueur adds a certain je ne sais quoi to the flavor profile of hot chocolate.
Top it with my all-time favorite keto whipped cream, and you've got yourself a a winner.
Ingredients
- 1 tablespoon of melted 62% cacao dark chocolate
- 1 ¼ cup water
- 1/4 cup heavy cream
- 1.5 oz keto coffee liqueur
- Keto whipped cream
- 100% cocoa powder (optional)
Nutritional content
The key to keeping this recipe low carb is using 62% (or higher) dark chocolate chips, heavy cream, and allulose-based sweetener in the whipped cream/liqueur. One serving contains 7 grams of carbohydrates; keto allows for 20-30 grams per day.
Here's the nutritional breakdown for one serving.
Steps
- Make your coffee liqueur and whipped cream in advance. Store in the fridge until ready to use.
- Melt chocolate chips in a glass bowl over simmering water. Stir often while melting. Remove from heat once melted through. Set aside.
- In a separate pan whisk water, heavy cream, and 1 tablespoon of melted chocolate. Whisk until everything is heated through and blended. Add 1.5 oz of coffee liqueur. Top with keto whipped cream and dusting of cocoa powder.
Other ways to elevate this hot chocolate
- Take this drink to the next level with a shot of vanilla vodka!
- For a hint of peppermint, use one teaspoon of peppermint extract. Or, in place of 62% Cacao use ChocZero's Peppermint White Chocolate Chips.
- Dip sliced strawberries into your homemade keto whipped cream. My kids love it!
- For a Valentine's twist, sprinkle 100% cacao powder from a shaker onto one of these fun latte art forms. I'm positive your loved one will appreciate the gesture.
